I love mac and cheese and order it whenever I see it on the menu. I'm usually disappointed. However, mac truck really got that elusive creamy cheesiness of proper mac and cheese down solid. I just got the plain old regular mac and cheese with breadcrumb topping. Like I said it was so creamy and smooth and had the right amount of cheesiness. The breadcrumbs were good and the people were super nice. I definitely would go back to try their more elaborate options like cheeseburger mac and cheese.
I love Pier 13 in Hoboken; there is nothing I do not LOVE about this place (okay maybe the bathroom lines), but Pier 13 is heaven. It opened this weekend and when I decided what day I wanted to go (Friday, Saturday, or Sunday), I let the type of food trucks be my guide to decide! And I was more than excited to see the Mac Truck would be there on Saturday.
I love mac and cheese and this place had it going on. There mac and cheese was delicious and an added bonus, it was affordable. I had the traditional mac and cheese and was very happy, my girlfriend had bacon added to hers which was delicious as well. We were very impressed and would love to try again!

I thought that I could finish a large one (hey, I was hungry) but should have gone with a small instead. They have all sorts of "special" mac n cheeses – buffalo chicken, cheeseburger, bacon… etc.
I tried the buffalo chicken. They put the buffalo chicken on top of the mac n cheese, which was good because you could eat a little of the meat , or just sneak a bite from below and just try some mac. Very very good.
I will keep an eye out for this truck and go back soon – (who could miss it – it's bright yellow!)
At the Chelsea Bazaar event, I tried the Mac of the Day but the pizza flavors were a bit overpowering and I couldn't taste the mac & cheese though.
I loves how we were getting what we paid for and the portion size was just right and fulfilling. Hope to try the rest of the menu =)
I found myself questioning if the cheese was cheddar or imitation, and that's not a good way to start a review. The dish was a bit gooey, not the proper pasta + creamy texture that mac should have, but instead all jumbled into one sensation. I ordered it with bacon and got a decent amount of bacon on top, along with breadcrumbs and a lonely squirt of hot sauce. I know it's free, but can you spare any more? I'm not ready to say it's Velveeta like Lauren M. but I honestly wouldn't be surprised if it turns out that it is – and that'll knock another star or two off the review. If it's not, step your cheese sauce game up!!
I was able to try the Mac Truck compliments of Flagship Brewery as they hired the truck to park outside the brewery tonight. The buffalo Mac and cheese was EXCELLENT and I took the crew's recommendation of topping it with breadcrumbs and parm. The Mac and cheese was perfect, not too heavy but still creamy and filling. The buffalo chicken was excellent and gave a nice amount of heat to the Mac. I hope I run into the Mac Truck in the city some time soon.
I really wanted to love this truck! But I didn't. I love the concept of Mac n' cheese with different meats. I ordered the BBQ Pulled Pork Mac and cheese and I wasn't that impressed unfortunately. All sides are free which is cool, I got breadcrumbs and spicy mayo to top it off. The cheese used for the macaroni was mediocre. I got more of that cheese that you squeeze out of a foil bag taste and I wasn't too crazy about the pork either. I was super excited to try it but my expectations were not met. Dont get me wrong its not terrible and may be worth a shot, some others seem to love it but Ive definitely had better.
Although a bit pricey ($8 for small and $10 for large), the mac and cheese is exceptional. Love the free condiments such as breadcrumbs and truffle oil. You should share a large box because it's very filling.
