Woo hoo Thai food on a truck – love it! I recently went to a food truck gathering at Bergen Community College. My eyes instantly gravitated to the Thai Elephant. I read a few reviews on this truck and really wanted to try the Green Basil Chicken, but they only had the Pad Thai option for this festival, so that's what I ordered. It was very delicious! I thought for $6 I got a good amount too. I would definitely like to taste other options next time.
I've never ordered from a food truck, been told my order will take 20-30 minutes and to come back for my food. WHAT THE!?!?!? Isn't the main purpose of a food truck to deliver fast, delicious food on the fly? If it's going to take 20-30 minutes, I would prefer to place the order on Seamless and wait for my food in my PJs on the couch. Thanks.
That being said, I cannot knock the food. It's good and (obviously) prepared to order which creates the long wait time. Still, there has GOT to be some sort of in-between efficiency standard where you can prepare at least some of the ingredients halfway so your customers aren't waiting 20 minutes per order every single time. In the meantime, I'll admire your food smells from afar and go home and order Seamless Thai takeout.

I've had the Sping Rolls and Pad Thai
The three times I've ordered the Pad Thai the heat level (which I've requested as Medium each time) has varied tremendously. First time was so mild I thought I miss ordered, the second time the order was on point. The third time I would swear they gave me the hottest. If they could just get this right it would be a regular destination.
I'm really picky about my Pad-Thai, and this is the first time I've tried Aroy-D's and its just teh way I like it! I have eaten here a few times (when its in jersey city) and love how the food tastes, its so fresh and not overly complicated. I usually get teh sweet and sour chicken over rice (its NOT like Chinese takeout kind, i'm talkin' thai style) and the curry puff. The guy at the truck today was extra nice and made a point to get my food out quick since I was about to fly away in this weather. Everytime this truck is near my job I go out of my way to eat there!

It was a cold and dreary night, and I left work late once again only to find myself on the even later Montclair State train. Depressed and hungry, I commenced a conversation with my stomach as I walked home in the pouring rain. This diatribe involved consoling Ms.Tummy and instructing her to be brave in the face of leftovers. When all of the sudden a voice called to me from a truck – a truck painted with an elephant.
Lady in the Elephant Truck:"Do you want Thai food?"
Me: "Hellz yea!"
And so began my love relationship with the never expected, but always appreciated Thai Elephant Truck
I really want to like the Thai food here! I love supporting food trucks . The drunken noodles I got were just not authentic Thai style that I normally enjoy. I did ask for spicy so she gave me some extra pepper on the side so the spice level was perfect but just the flavors were lacking. I only waited about 5 mins for the food so that was perfect for those of you who want to grab food and rush to grab a seat on the pier!
