It's the girls versus the guys. The recent opening of Rincon almost helps to recreate that famous scene from Westside Story. (Allow me to explain: Rincon, operated by a seemingly all female staff, serves up "typical" Dominican fare (you know, chicken, chicharron, platanos) and has been granted a position on 103rd Street opposing the "slow and steady" institution La Cabaña operated by all males.)
I, quite frankly, don't care who's cooking. It's the food that counts!
While Rincon looks healhier (because of the lack of deep fryers in the front of house) and more inviting, with a cleaner, all glass facade featuring pollo a la brasa rotating in the window, you'll see – by just looking in – that a good number of the featured dishes have been pre-prepared and are sitting under heat lamps (poor chicharron! The ladies have turned your crisp potential into a hard-skinned fatty mush!)
Ultimately, I will defer to the wall of deep fryers across the street. (My chicharron needs to be hot and crisp, dammit!) Besides, it's Dominican food. It's definitely not the healthiest choice – so why bother with the guise?
