  1. After having dined at the predecessor restaurant, Bivio, on several occasions I was intrigued to learn a new establishment had taken over. I was happy to find that they had fixed all of the flaws of the previous ownership.

The décor has been slightly updated with tasteful prints of notable Italian landmarks and a warm wall color. The music was not too loud and was a nice mix of standards and newer tracks. The menu is on the smaller side, which I like, with two salads and six pizzas along with some weekly specials to round out the offerings. I personally prefer this method as it allows you to perfect the recipe and always have the freshest ingredients.

We started with a mixed salad which was enough for us to share. It was lightly dressed and the waiter was savvy enough to divide it tableside which was a nice touch.

We ordered two pizzas, the Tre Carni, with speck, salami and soppressata on a base of San Marzano tomatoes and fresh mozzarella. The other was the Filetti with cherry tomatoes, mozzarella, fresh basil and garlic. Both were perfectly cooked with a nice char on the crust but still toothsome and filled with bubbles.

The flavor on both was delicious as they were not overly loaded with toppings and each bite allowed you to taste the various, and very fresh, ingredients. I found the dough to have a very subtle sourdough note which certainly helped add to the overall flavor.

The service, which was notoriously slow at Bivio, was outstanding and very accommodating and we were told they now take reservations for groups of 5 or 6 where, with Bivio, it depended on who answered the phone and what mood they were in.

We are looking forward to adding Aquila to our regular rotation and trying out their specials.

  2. This place opened after my beloved bivio closed their doors. I had little expectations because I thought how could any other place compare. I am happy to report this place has not missed a beat. They kept some of the staff from bivio so you still have the awesome attentive service. We started off with the grilled shrimp appetizer and meatball appetizer. Both were delicious. The shrimp was super fresh. I ordered the Bianca pizza which is a white pie with prosciutto on top. Wow! Amazing I loved it. The dough was perfect. My husband had the special pie which was a white pizza with garlic, duck sausage and zest on top. This one blew our minds. The combination was so good and the duck sausage was delicious! Now for dessert we shared a cappuccino and we had their tres leches. What I loved most about the tres leches is that they put an Italian spin on the traditional Spanish tres leches. Moist and pure goodness. The cappuccino was excellent as well. Overall I am happy to say this is definitely the best artisanal pizza around. I highly recommend to anyone who loved bivio and artisanal pizza to give this place a try.
