Flavorful broth, and an ample amount of al dente hand-pulled noodles. Make sure to get the spicy oil with chili flakes (not the sriracha sauce) as a side condiment. It has a slightly smokey, nutty flavor to it and adds a nice kick to the noodles.
I only wish they included a little more meat. The oxtail noodle soup only had about three pieces of meat in it.
The noodles themselves are among the best I've had in Chinatown: thin yet very chewy, they keep perfectly well separated in the bowl, and maintain all their chewiness from start to finish. Just perfect.
