Alert: Vegetarian Review.
So the Vegetarian Ramen was fine. Fine being a euphemism for not a lot of taste but I could stomach it. In order to actually *taste* the bland broth I had to add copious amounts of red chili oil sauce.
If you want to give your vegetarian palate justice, I suggest you head to Samurai Papa in Brooklyn OR Soba-Ya in the E. Village for vegetarian or vegan Japanese noodle broths with layers, nuance and most importantly, FLAVOR.
The perfect ramen for a cold night. Came in from First Saturday at the Brooklyn Museum hungry for good food. Started the meal with shared spring rolls (veg) – delish! Spicy string beans – delish! Also, they made them veg for us by putting the teeny tiny dried shrimp that usually go in the dish in the side. And crab dumplings – DELISH! And those of us at the table who eat meat added the shrimp to our dumplings and we're just so effin' happy. #lesigh
And that was before we got to the main event – ramen. Both me and The Hubs had the spicy double pork belly ramen. Fireworks! Flavors were on point, noodles were springy and chewy, heat of the dish was in that not-quite-too-hot sweet spot. My Sis had the vegetarian ramen. I had read that it wasn't that flavorful but she gave it two thumbs up, especially with the addition of that amazing hot chili garlic sauce on the table. Goodness that is some really really good sauce.
I'm also appreciative of restaurants where veg and non-veg can eat together and the food is good for BOTH.
We'll be back. It was good. My belly is happy.
I came here around 6:30 pm on a Monday with a friend. We ordered the short rib and spicy miso ramen.
OVERALL: Ganso is decent. The ramen definitely tastes somewhat American, especially the obvious "fusion" items. The prices are fair.
SERVICE: Our server was very helpful, told us the daily special/seasonal vegetable right away. Waters were refilled quickly and we weren't ever bothered in any way. We were basically the only ones eating and our ramen took about 15 minutes to arrive. A fair wait, IMO. [4.5/5]
ROOM: Good looking room, nice open kitchen with glass windows. Bar seating and booths are available. Nice decor, sake bottle display, and utensils were stored in cool bamboo holders. Looked every bit the part [5/5]
FOOD: We had the short rib and spicy miso ramen. Short rib was tender but to be honest, the broth didn't taste very japanese. The spicy miso- my friend remarked that it tasted neither of spice or miso. The pork belly was very tender though. Portions were reasonably sized. The broths were good, but I wasn't compelled to finish all of it. The scallion on top was cut somewhat shaggily – either this was intentional or someone in the kitchen may need to run an edge across a stone. [4/5]
VALUE: All the ramens were around $15. Based on the quantity and quality of the food, I would say this is fitting. Not a great value, but you're not getting ripped off either. So it's a fit. [4/5]
It's been three years since I've been to Ganso, so therefore a revisit was necessary. I came here with my old colleague/friend and my boyfriend for dinner since we were all in the area.
The decor is still the same and it's still large and spacious. Service was on point and servers were friendly and attentive, but those were probably the only positive notes about the experience.
Japanese Fried Chicken – quick-fried and boneless and comes with a yuzu-mayo dipping sauce. I was little disappointed that it was only four pieces for $9.00 and I've also had better Japanese Fried Chicken in other ramen spots. My boyfriend and friend detected a little bitterness in the fried chicken which created a red flag and addressed it to our server. Our server spoke with a chef and they offered to make another one for us.
Sizzling Gyoza – it wasn't sizzling when it arrived to our table. I looked back on my review of Ganso on Yelp and there was definitely a $2.00 increase on the gyoza and the way they served it is different from what I had three years ago. The gyoza was cooked correctly and had good flavor and juices, but still $9.00 is a lot for gyoza.
Tonkotsu Ramen *Hakata Style* – my boyfriend ordered this ramen and It was rich, creamy pork broth with thin, straight noodles, roasted pork belly chashu, half egg, greens and extra flavors of sesame and roasted garlic. His ramen looked a lot better than mine. I tried his ramen and the broth is indeed rich, but salty and noodles were okay, but definitely not al-dente.
Tonkotsu Ramen *Kagoshima Style*, – my friend ordered this and it's slightly different and similar to my boyfriend's ramen. The only difference is that the broth has garlic and soy sauce.The toppings and noodles are all the same as my boyfriend's. My friend is used to eating salty foods, but to him this over the top salty. He also had two beers to wash down the salt.
Braised Short Rib Ramen – Honestly, I wasn't a fan of the braised short rib ramen because it was extremely salty which ruined majority of the ramen. However, at least the short rib was tender and moist.
I thought after three years maybe the food would be different and it was different, but not in the way I had hoped. Everything has gotten pricier and definitely saltier. We were all very discouraged from the quality of the ramen,and sad to say we won't be returning to Ganso.
Satisfyingly chewy ramen, hearty sea salt broth, and tender dark meat chicken with a little bite from scallions and crunch from bean sprouts and topped with a gooey egg really hit the spot on this rainy night. I'm talking about Ganso's Tori Shio ramen, which I tried tonight.
I was less impressed with the crab shumai; they tasted like fresh crab but not much else and were forgettable. My dining companion agreed, forcing an uneaten half of the shumai she tried upon me as she happily sipped her cold beer.
No complaints about the service or ambiance, though. Our server was appropriately attentive, and the caramel-colored wood benches and tables and soft lighting led to an overall pleasant experience.
If I were looking for ramen in Brooklyn again, I wouldn't hesitate to go back. I definitely valued the chewiness of the ramen over some of the more forgettable noodles I'd had at Naruto in Park Slope and also better in texture than the ones I waited in line for at Totto Ramen in Midtown. Definitely a solid dinner experience. But don't get the shumai.
Solid ramen. Came for lunch with the family and was very happy with our choices. The stamina ramen was hearty and satisfying. The wings were flavorful and yummy. Staff was good and the place is clean and modern. Nice to have a good ramen place nearby!
Fresh really healthy meal.
I got the teriyaki salmon with half order if gyozas.
I would come again for ramen and shumai next time.

Go the spicy miso ramen, Hiyashi Chuka and chicken wings. The Spicy Miso was just okay. The soup was a little thin and without the typical richness. The Hiyashi Chuka, cold ramen had the hardest noodles. They were more than traditional
al dente. The best thing is the chicken wings. They were crispy and the sauce was very flavorful. With the cost about $16 per ramen, I felt the cost didn't coincide with the flavors. I think I would've been more satisfied if it was $10 per ramen.
