Surprised with the quality of these! Wasn't exactly what to expect, with the whole cronut, doughissant, sushiritto, churro ice cream sandwich…HYBRID OF ANY RANDOM FOOD FAD.
Tried it out on my way to the train station from Smorgasburg (as if I hadn't eaten enough). It's like pho soup in a dumpling! (I thought there were going to be pho noodles inside, silly me.) The flavor is rich and bursting from the petite dumplings, and goes really well with the little squirt of sriracha and hoisin sauce they put on top! It's like a xiao long bao, but with beef soup instead of pork! The skin was a good texture as well, and the staff were super friendly. 🙂
I was so excited to try these and I was disappointed. They were stuck to their little cups so to get them out, most of the soup came out. I didn't think it was worth it. But Pho is so PERSONAL. I like mine with mint, lime and bean sprouts. Since I didn't taste any, I was just confused. I love the idea but maybe they need to be bigger?
Made in VietNOM.
Whoever's wrapping these things, you can tell they're having fun because some of them come out with a perfect spiral.
I love how they're right outside Smorgasborg, like "nah, fuck that"; I can only imagine how much it'd cost to get a booth slot there.
The phumplings themselves leaves much to be desired. And by that I mean: I desire to go back. If you don't put more hoisin sauce on, you can really taste the pho broth… phroth? And I mean REALLY taste the meat. Ladies. I don't recommend doing that though. Pho was meant to be dipped in hoisin and just a little more and it makes the dish come together. It's like a tasty puzzle.
I think what we're all hoping is when it becomes a brick & mortar (because it's going to happen) it'll be cheaper than $7 for 3.

OMG! Pho soup dumplings?? *MIND BLOWN* These unique soup dumplings are amazing!! I could literally eat these all day. When you bite into these dumplings, your mouth is filled with flavorful broth and juicy, tender pieces of beef. My biggest regret: only getting 2 Phumplings. That just means I'll have to come back for more!
Thought these were really awesome. I was with my boyfriend and we walked past this place (it is a little stand on the side walk) and we decided we wanted a little snack before lunch. They were little soup dumplings that came in this mini plates and they were filled with a really tender brisket type of meat. The soup was a delicious beefy broth. The presentation is really pretty – they put some siracha and a green sauce on top but i wanted more of that to add to the flavor. They are expensive though
I was skeptical, but when I first heard about these phumplings, I knew I had to try it. Ventured all the way out to bushwick, and they were already packed up and gone when we arrived. But I randomly walked past them as they were set up outside the Brooklyn Flea, and although we JUST ATE, I couldn't pass up the opportunity. I made the right choice. They were glorious! It's everything great about a soup dumpling but with beef pho broth inside! The little dab of Sriracha and hoisin sauce on top and basil–perfect touch.
As I waited for my dumplings, I enjoyed watching them make the dumplings. It was almost mesmerizing the ease yet perfection they created.
Hope to be back for more soon!
UGH this place. i don't even know where to start. first off, i love soup dumplings. i'm chinese and i basically grew up with that shit. well, when i moved to ny, my friend told me about phumlings.
wtf are phumplings, i asked. she told me their soup dumplings but with pho soup. obviously, i had to try it and coincidentally, they had reopened their stand somewhere in chelsea (i just moved here so i really do not know my neighborhoods).
we found the stand and saw that it was 2 phumplings for 5 dollars and 3 for 7 dollars. i opted in for 2 because i was already pretty full at that point. the woman at the register took my order, she was pretty nice.
after 5 minutes of waiting, a sudden wind almost blew all the orders away! luckily, it looked like the woman was able to grab them all and saved them from the wind.
This is where my 2 stars come in for those of you who are still reading – after 15 more minutes of waiting, all my friends had already gotten their phumlings. so i went up to the man behind the table and said "i think you guys may have lost my order". he looks at me and says "yeah..possibly.." so i said "i ordered 2 beef phumplings" and he goes "ok, one moment". after some weird shuffling, he says "ok, it'll be 4 more minutes". at this point, he's just handing out phumplings like candy, left and right, meanwhile i've been waiting for 25 minutes for mine. the orders keep coming in and after 10 minutes passes by, i finally say "am i ever going to get my order". he looks at me and goes "oh yeah" and hands me some phumplings that were sitting in front of him.
i'm so livid at this point that i want to throw my phumplings in his face. i eat one and they are NOT what they're hyped up to be. the beef had a weird crab like texture and the pho broth was just ok.
NO MORE PHUMPLINGS
pho + dumplings = genius
As a huge fan of both pho and xiaolongbao, I was super intrigued by the concept of phumplings. I didn't have much expectations, but thought that it would be a fun thing to try. I shared 3 dumplings (for $7) with my friend and were both pleasantly surprised. The broth was savory with a rich beef flavor and it felt like I was eating a bite full of pho with each phumpling. We left wanting more, but restrained because of how pricey it was. We were essentially paying the price of a full-sized bowl of pho for three measly bites. As a whole, Phumpling is definitely somewhere worth checking out if you're already in the area. One star off because of the price.
Phumpling, even though your dumplings were pho-bulous, I think I can only afford stopping by pho special occasions.
