Shatzer consistently produces the best hand shmura matzah, which scrupulous Jews use at the Passover seder (other stringently Orthodox Jews will use hand shmura exclusively throughout the 8 days of Passover, whereas more Modern Orthodox Jews, such as myself, will use hand shmura for the two sedarim and consume normal Kosher for Passover matzah throughout the rest of the holiday). These matzos are round, crunchy, slightly charred (one can taste the artisan quality of this product, redolent of the brick oven it was baked in, and one can certainly appreciate the painstaking effort that goes into preserving this craft, with thorough and exacting standards of cleanliness taken in order to prevent the dough from turning to leaven after 18 minutes). Furthermore, Shatzer generally has one of the lower rates of broken matzos per box of any bakery (broken matzos cannot be usen for ritual purposes, as the "loaves" must be whole and in tact), and the kosher status of their matzah is unquestionable. Prices are steep for hand shmura matzah, though, but for taste, kashrut, and quality, I cannot think of a matzah bakery better than Shatzer, which literally embodies the taste of Passover.
