Burgers are white hot in Manhattan right now, so hey – here's a new destination for meats in Soho.
Trademark Burger just opened one day ago. They're sourcing ground beef from a Colorado rancher who's somewhat of a renegade in the farmed meats sector. Most cows get to live a 14 month life before they're introduced to the process that ultimately ends up between two sesame seed buns. Their importer doubles down with cows that get to live a rich 34 month life before their next purpose, resulting in a more humane (and tastier) product. If you give a damn about where your food comes from, you should pay attention to what they're doing at Trademark.
Unlike places like Salvation Burger or other palatial nouveau locales, Trademark is tiny. Like, broom closet tiny with a handful of seats, a small bar (it's a full bar, funny enough), and a kitchen that might fit five kitchen staff members, max. This isn't the type place to hold a birthday party, unless your birthday party includes only yourself. Because of this, it's an intimate culinary experience.
Like the space, the menu is small; a handful of burgers, a hot dog, some sides, and not much else. The hot dog will set you back $4, the burger will cost you $7. The most expensive item on the menu is the $16 pour of Booker's Bourbon, while a can of Narragansett beer is just $3. You can leave Trademark spending as little as $7 for a hot dog and a beer, which is a welcome economic addition south of Houston.
Get in there and strike up a conversation with Max. Great dude who got his start at Torrisi on Mulberry, so he knows a thing or two about how a lower Manhattan restaurant should be run.
I walked by Trademark on my usual route to work and noticed that something new had opened up in the neighborhood. I made a trip during lunch to check out the menu, which looked pretty enticing. I quickly texted my coworker, who is a fellow food lover, and enticed him out to have lunch right then and there.
We were created by the owner upon entering and told to just grab any seats. There are probably around a max of 8 seats in the entire place, so I can imagine them being very packed when more people learn about them.
We both opted for the Trademark burger with their special sauce and an order of onion rings to split. The onion rings really hit the spot – and for an additional 25 cents you can dip them in their signature sauce. The burgers were flavorful and juicy – definitely better than your typical burger.
The wait can be a bit longer than your typical burger spot since there's only one person in the small "kitchen", but I'm going to chop that up to opening week glitches.
I'm so glad there's a solid burger spot by work – another option to add to the lunch rotation!
Stopped by while walking around in the city. Small nice place with limited seating. Simple menu – basically burger, fries (not available on the Sunday afternoon I was there – ??!?) and onion ring.
The burger was flavorful and filling. Onions were seasoned well. I loved the vanilla milk shake. This is definitely a place to stop by and have a quick bite when shopping in the area – not a place you would drive across town for, though.
